I make a batch of this once a week with different flavoring items, cilantro, roasted red peppers, roasted garlic or anything else that strikes my fancy. I save the juice from one of the cans instead of using olive oil if I want a lower calorie version of this snack. This is a very satisfying stew, chock full of potassium and not too much sodium.
To cut the fat, you can sautee the onion and garlic without the oil. To cut even more fat, only use 1 T of peanut butter.
