Three-bean Salad (vegan, fat-free)

I used half the quantities of the vinegar and sugar in the nutritional info, because half of it tends to stay behind in the bowl. If you tend to like to drink the liquid or something, double those for nutritional info.

The dressing tastes a little better with salt in it (as much as a tablespoon), but I'm cutting down on sodium, so I left it out, and it was fine.Submitted by SERENE-VANNOY

Roasted Brussel Sprouts with Lime

Don't like brussel sprouts? Try fresh. Adding lime to mixture gives it a little bit of a tangy taste. Not overwelming but just enough. You can also substitute lemon juice if you'd prefer. Want more citrus flavor? Add some lime or lemon zest! Cut each serving by 20 calories by only using 2 tablespoons of oil! Submitted by DODGEEWE

Spicey Lentil Quinoa Dish - Low Sodium, Vegan

Tropic Island Vegetable Soup-low sodium, organic

This is a very refreshing basic 30 minute vegetable soup. The coconut oil makes this soup perfect. If you're not a vegetarian, you may substitute for low-sodium chicken broth or your own home made chicken broth. I'm not a gourmet cook and have a busy life so I made this veggie soup to meet my needs for a nutritionally quick, easy and good tasting meal. Most of the ingredients came from my garden.
