Vegetable Sausage Soup

Wholesome healthy soup packed with vegetables.

Be sure to cook/simmer on a low to medium flame to help preserve the vitamin and mineral content (an alternative would be to bake it on 300 degress would probably be best for about 60 minutes). I actuall save and freeze all left over vegetables so when I need to make a vegetable stock/broth, I have something handy and very tasty with less calories than the cans or boxes. Otherwise veggie stock/broth can be substituted.

If using canned, it will be 45 minutes.
If making your own broth/stock, you will need to do that first before adding the actual veggies you want to eat.

To make it a gluten free meal, omit the sausage and replace with a gluten free variety.Submitted by SMITHLPOOLE
