I've measured this recipe out and one serving is roughly 1/2 cup. It works well with normal (non-silken tofu) - actually it works a little better because it's not as delicate as silken. But use what you've got!Submitted by MAIRINDUBH
This is a delicious, creamy, rich potato soup that happens to also be vegan! Would make a great fall meal with a piece of crusty bread.
