Delicious, Low calorie and filling.
Chop onions into very small pieces. Chop all other vegetables into uniform, bite-sized pieces. Use olive oil to caramelize onions, then add garlic. After a few moments add all other vegetables. Add Broth, diced tomatoes, and water until pot is close to full. Bring to a boil. Once boiling lower temperature to a mild simmer. Continue simmering for 45 minutes to an hour. Add water as needed.
