"Pax Romana" Cookies

The wonderful woman who gave me this recipe, and the rest of the Italian family, loved these when I brought them to her sonís hockey game. The slightly uneven texture is sandy without being dry or grainy thanks to the ground almonds, and the hint of lemon brightens them up and adds a little flair. Submitted by JO_JO_BA

Coconut - Carob Frosting

Rich, thick and full of flavour from creamy coconut milk, coconut oil, coconut extract and naturally sweet carob powder. It whips up nice and smooth, and if you chill it, it pipes like a dream!Submitted by JO_JO_BA

Jammin' Oatmeal Cookies

For those of us who like our peanut butter cookies with a little more texture than the others. I used homemade "jammy bits" (baking pureed cranberry sauce to make a thick fruit leather) but you can also use whatever dried fruit you have on hand - just chop it if it's bigger than a raisin.Submitted by JO_JO_BA

Chocolate & Jam Tea Cake

A mix of homemade fig and peach jams add luscious flavour and moisture to this cocoa-based tea cake. Mesquite flour and maca powder add even more richness, while cacao nibs add crunch and chocolate chips add bursts of sweetness!Submitted by JO_JO_BA

Vegan Polenta Banana-fig Cake

A different take on a fruit cake, made with yellow polenta and mashed banana, and studded with figs and raisins. Laced with brandy, but you can use apple juice if you want. Low-fat and totally vegan, though you can substitute if you wish. Submitted by JO_JO_BA

Cherry in the Roses Cake
Cherry in the Roses Cake

One layer of elegant and exotic cake that I made to turn into "cake balls", along with the "Where Did the Rum Go" cake. This is a crazily hot pink cake, and the amount of cherry extract is correct - I used LorAnn's flavouring which is about 10x stronger than the average! Though subtle, the rosewater really lifts the cake to a new level.Submitted by JO_JO_BA

Ginger-hazelnut Asian Pears

A unique and decadent twist on the traditional baked apple, using crisp Asian pears and stuffing them with a decadent blend of hazelnuts, brown sugar and dried cranberries. Delish! Submitted by JO_JO_BA

Sushi-ful Salad

Delicious, simple, and beautiful. Serving sushi salad on a bed of lettuce, garnished with slices of red and green bell peppers, makes this a work of art.Submitted by JO_JO_BA

Eat - Air Inspired Tangerine Soy Fry

Tweaked from Eat Air, a vegan food blog, this is a delicious, tangy-sweet meal for 2 when served with some nutty brown rice, or as a delicious lunch in it's own bowl!Submitted by JO_JO_BA

Blueberry-Citrus Pie
Blueberry-Citrus Pie

With a bounty of fresh, local and super-juicy blueberries at my disposal, I twisted the traditional addition of citrus in blueberry pie by using lime and orange flavours in both the whole-wheat crust and the filling!Submitted by JO_JO_BA
