This is a very versatile recipe; you can toss just about any vegetable you have in your fridge and it will turn out great. I like to substitute chopped sun-dried tomatoes for the fresh tomatoes, it adds a little pizazz to it. Also, try adding some fresh sweet red pepper, yum! Note: The measurements may need to be tweaked a bit, I don't actually measure when I'm cooking I just start tossing and tasting, so feel free to experiment.Submitted by JETTAGIRL33

If you can find small yellow crooked neck squash, those work best. I live outside the South, so I look for the smallest yellow squash I can find.

Vegetarian, but not vegan, and certainly not boring. A good burger substitute if you're reluctantly cutting back on red meat. Leaving out the cheese and mayo is all it takes to remove animals completely from the equation, if that strikes your fancy.
