slice eggplant in round circles. Dip them in 2 scrammbled egg misture and then into a bowl of seasoned breadcrumbs. Fry them in olive oil over med high heat a about 1 minute per side. Set them aside.
In a casserole dish place enough spagetti sauce till cover bottom of dish. then add one layer of sliced eggplant. then add shredded parm cheese, then add mozzarella cheese on top of that. Sprinkle with chopped garlic. continue adding these ingredients in layers. End with sauce on top and shredded parm. Put in over covered at 350 degrees for 30 minutes.
