beefed up Fiber One apple muffins

I wanted something that had fiber and protein. The Fiber One muffin mix had the fiber, but not much protein to speak of. So I added soy protein isolate because it doesn't have much flavor to interfere with the taste of the muffin. I added moisture to counter the additional dry ingredient by adding the apple and spices, and more baking powder to counter the increased density from the added ingredients.Submitted by CMAIVILLE
