When you need something in a hurry that will boost your calorie count, protein and fiber for the day, here is something that you can throw together and it's ready in an hour. Tip: Keep a can of cannelini beans and a can of tuna in the fridge, and it can be ready to eat right away. This is delicious the next day and the day after that, as well. The dressing is just the right amount for flavoring without obliterating the individual tastes.

This is great in a Pita for lunch or with crackers for a high protein, high fiber snack - soundswierd but is very yummy and filling!

Here is a filling salad for lunch or dinner that will also help use some of those veggies from your garden. It has a wide assortment of nutrients and vitamins (especially B and C), fiber and protein. I have converted my own recipe to ingredients more acceptable for Sparks people, but some of you may want to look for an Italian-type fat-free dressing with a lower sodium content. I would welcome any thoughts on this.

A very delicious variation on chicken salad. Using Dijon and honey in the dressing make the difference. It's great to make a whole batch and just eat on it all week. Super crunchy, super good, you'll want to serve this at all your brunches and lunches.
