When you need something in a hurry that will boost your calorie count, protein and fiber for the day, here is something that you can throw together and it's ready in an hour. Tip: Keep a can of cannelini beans and a can of tuna in the fridge, and it can be ready to eat right away. This is delicious the next day and the day after that, as well. Here is a filling salad for lunch or dinner that will also help use some of those veggies from your garden. It has a wide assortment of nutrients and vitamins (especially B and C), fiber and protein. I have converted my own recipe to ingredients more acceptable for Sparks people, but some of you may want to look for an Italian-type fat-free dressing with a lower sodium content.
