Cookbook creator says: best fish taco recipe i have found. my hubby hates seafood&i can't get him to eat it. however, he gobbled up every bit of his tacos in a hurry. it's a very simple recipe, easy to make , & can be made quickly. it took longer to make the side dishes than this but it doesn't skimp on flavor.

this recipe is not an exact calculation. this is an estimation of what i put in there and then added more or less if it seemed off in taste. it also makes quite a bit so it can be reduced to half but we like to have some for snacking beforehand and left overs for the next day.

Cookbook creator says: i shredded it & used it for taquitos.the left over sauce in the crockpot i mixed with the beef for inside(with cream of mushroom) then smothered on top when were done or on the side which tasted like a homemade enchilada sauce. it also tasted good over beans & rice. added lime juice while cooking 2
