These come out very moist. I found this on the back of a grocery store ad and made a few changes. The original called for 2 tsp of Thyme, 1/4 c of Parmesan, & 2 c of cornflakes. I measured after I dipped and found I had a good 1/2 c of mixture left so I cut the recipe back accordingly.

* For those of you that are salt restricted- You might want to leave out the salt as there's probably enough in the Parmesan cheese. I just sprinkled a little salt over the bowl.

I also extended the cooking time. The original time was 20 mins.Submitted by NANADEB49

My mother made this recipe for us all my life. It is difficult to guess amounts when you are used to just pouring things in my sight, so you may have to play around with the ingredients on this one or write me. You can also add green bellpepper to it, but my hubby is not fond of them, so I don't normally. I like it with about one medium pepper in it though. I'll try to put a photo in soon. This is my regular pasta salad with 6 ounces of pepperoni and romano cheese. Pepperoni adds mostly fat, salt, and a little protein, so feel free to leave it out. I think it adds something extra to the flavor as long as it's consumed in moderation.
