This pie will knock your socks off! I make it without pie crusts to save LOTS of calories! Recipe makes two pies, eight slices each. A nice Christmas alternative to yet another pumpkin pie! Better texture than pumpkin, and you only need three sweet potatoes for two pies!

Crush vanilla wafers in plastic bag.
Mix in Rum, Powdered Sugar and corn syrup until the vanilla wafers are moist
Stir in Chocolate chips and chopped pecans (to taste)

Put in refrigerator several hours or overnight to harden. Then roll into balls about the size of a melon ball and lay out on waxed paper. Sift Powdered sugar over top and roll balls around in excess sugar to fully coat.

I was so impressed when this actually came out and made a delicious pie. Can be used with any kind of pie filling ( I like the no sugar added cherry and apple from Walmart) but would work wonderfully with sugar free/fat free Jello puddings like lemon or cheese cake! Also, you can top with meringue as well, use the same recipe for the meringue, fill pre-baked crust with filling, top with fresh meringue and bake at 350 for 15 minutes! Enjoy.

I got this recipe off a raw foods website. It's a totally delicious, all-natural alternative to traditional pie and it's super-easy to make. The dried fruits listed are what I used when I made it. Dates are usually recommended, but as you can see, I used apricots in the filling, and it worked just as well, so you can experiment with different dried fruits, different berry fillings, and different nuts to personalize your pie. I made mine in muffin tins and ended up with personal-sized pies, which made portion control much easier. Highly recommended!

Sift flour and salt. Combine butter and boiling water in saucepan; keep over low heat until butter is melted. Add flour all at once stir vigorously over low heat until mixture forms a ball and leaves the sides of the pan. Remove from heat. Add unbeaten eggs one at a time, beating thoroughly after each addition; continue beating until a thick dough is formed. Spread on a cookie sheet.

Bake at 375 degrees for 30 minutes. Cool. Mix 4 small packages instant vanilla pudding with 4 cups milk. Add 1 (8 oz.) package softened cream cheese. Spread over cream puff crust. Cover with Cool Whip and drizzle with melted chocolate over top.

A Christmas made straight from the heart... and home! Buckwheat flour added into the crust makes for both a tender and flavourful dough. A layer of thin apple slices underneath hearty spiced mincemeat adds texture and interest to the dessert too! I used my own home-made mincemeat for this, but jarred is fine... just pick one you like!

I tried this recipe when visiting in Maine at a little country flea market and I personally am not a fan of Rhubarb. When I have a chance to get Rhubarb I grab it now.

Amazing Ezekiel Bread Stuffing

This is my own version of this stuffing. It is absolutely tasty AND healthy! Ezekiel Bread is a dense, chewy, flour-less bread made with a variety of whole grains that are minimally processed to keep them as close as possible to what nature intended them to be. You can find it in the frozen section of healthy food grocery stores such as Whole Foods, Wild Oats or Trader Joe's. I had to guesstimate how many tbsp 10 shallots (baby onions) would be, so the calorie content may be slightly off because of that! You can also sub any loaf of whole grain bread for the Ezekiel Bread if you can't find it and vegetable broth instead of chicken if you want to keep this vegan, but it will change the calorie content of the recipe as posted. Recipe nutritional info as posted uses plain Ezekiel Bread and chicken broth.
