I vary the portions of vegetables in this soup depending on my mood (i.e., more carrots and less zucchini or vice versa). It's a delicious soup no matter what vegetables you put in it, and very low calorie as long as you stick with non-starchy vegetables.

Easy banana bread recipe, without all the fat of traditional banana bread. The original weight watchers recipe also calls for walnuts, dates, and apricots which I do not use.

Wonderful as a Sunday brunch. Makes a beautiful presentation. I add 1/4 cup tangy cheese after pulling out of the oven to add flavor and interest.
