These come out very moist. I found this on the back of a grocery store ad and made a few changes. The original called for 2 tsp of Thyme, 1/4 c of Parmesan, & 2 c of cornflakes. I measured after I dipped and found I had a good 1/2 c of mixture left so I cut the recipe back accordingly.

* For those of you that are salt restricted- You might want to leave out the salt as there's probably enough in the Parmesan cheese. I just sprinkled a little salt over the bowl.

I also extended the cooking time. The original time was 20 mins.

This is a super yummy, super easy recipe that is sure to satisfy your sweet tooth. They are very rich, so you only need 1 or 2 to satisfy that craving. After you've made this flavor - its easy to find other flavors - just mix and match the flavor cookies and chocolate (ex: PB cookies and dark chocolate, etc) - just be sure to recalculate your calories. Can be made with Neufchatel cheese too. Calories are usually a little lower, because I don't usually use all of the chocolate, but I calculated with the whole bag. Calculate your nutritionals based on how many balls you make. I usually make about 100. Great for parties - especially at Halloween - and great to make for gifts.

Wildly Addictive Peanut Butter Granola

A store near my daughter's house in California has peanut butter granola in the bulk food section. But I couldn't find it anywhere near my house in Illinois, so I found this recipe online and made my own. Now I'm glad I couldn't find it at the store. It's cheaper and I can control the ingredients that are used.

I make these for my family and they love them. They are high in fat so I limit myself to 1 or 2 from the batch. I also make a cream chz. icing for my family but I don't touch it.

If you do not have an electric mixer do not seperate eggs just mix the whole egg with the milk. Seperating just makes the muffins light and fluffy.

Also you can aliminate the brown sugar mix if it is not to your liking they will still come out great or add pecans or walnut to the Brown sugar mix.
(you will need to recalculate calories if you alter the recipe)
