Hello I am trying to get a collection of flavorful yet nutritious meals. These meals vary from ethnic to simple family fare. I'm not so interested in the calories as I am the sodium. Most of these are low fat and low sodium.

This is a really neat egg recipe I found in Cooking Light Magazine the May 2009 edition (page 148). I like cooking with ramekins and this is a truly easy menu.

Cookbook creator says: I persoanally realy liked this recipe. Mix up ingredients and refrigerate. I added a dash of crushed red pepper to the mixture, and made a sandwich. I had a tsp of ranch dressing on the wheat bread. Fast and delicious and no mess.

A favorite breakfast food with my kids. Lower in calories than regular pancakes, and more filling because of all the eggs. Serve with German Pancake Syrup (I've added this too)

this salad is the basic ingredients it does not include your dressing. I used a lofat ranch and a lofat buttermilk. You can add different vegetables as you wish.

Growing up I loved Halupki (stuffed cabbage rolls) and learned to make them the "authentic" way.... However I am always in a hurry. So I came up with this way to enjoy the flavor without all the fuss. Hey -- You don't have to cut them up this way! I have made these a varitey of ways from using prepared spaghetti sauce to this version - we prefer this way.
Sauerkraut can be added (just add the sodium to your count for the day)

If you are cooking for someone on a low sodium diet, use this recipe instead of taco seasoning. This recipe is the equivelant to one package of taco seasoning (or 3 tablespoons.) Adjust the strength of any ingredient to your taste.
