I'm a vegetarian...I like breakfast...so yeah :P I was getting really tired of oatmeal and cold cereal every day, and eating these for my morning meals really shook things up and kept me satisfied.

Cookbook creator says: I use two slices of Nature's Own Double Fiber Wheat Bread, so I just add the other slice of bread into my meal planner, I'm pretty sure the recipe was made with a lower calorie bread.

This is a family recipe that my grandmother brought over with her from Sweden. All my children and grandkids love it, it is the "expected" breakfast when they spend the night at Nana's house. I have replaced the 3 eggs with egg beaters. Serve with syrup (not included in the calorie calculations. My husband and I use sugar free syrup. They are more like crepes and are also delicious with fresh berries and diet whipped topping.

Tastes great, and it's vegetarian! This was supposed to be an omelet, but I forgot to spray the pan first, so I had to move it around and it ended up being scrambled eggs...still good though ;D
