I got this recipe from Weight Watchers. It's high in protein thanks to the beans. But pair it with a piece of whole wheat bread to make a complete protein.

This dish just cries "Summer" and it's one of my favorite dishes to make in late July, early August when the Farmer's Market is flush with these favorite vegetables.

If you prefer, you can peel the eggplant, but we love the added texture and flavor. I often make ahead on Sunday for dinner later in the week as the flavors marry and deepen if allowed to sit a day or two. Serve over whole grain pasta for a healthy vegetarian dinner that your kids will love.

I threw this together tonight with what I had in my house. You can reduce the sodium by draining and rinsing the beans (not accounted for here), but if you do that, you'll want to add about 1/4 cup of low-sodium vegetable or chicken stock to give it some moisture while it cooks. Play around and add more vegetables/seasonings, this is just what I had at the time.

A departure from standard pasta with tomato sauce- Neufchatel Cheese is used in place of cream cheese and the nutmeg and crushed red pepper flakes give it a unique flavor! A great new way to "eat your spinach"!
Ziti or Penne pasta can be used.
