Cookbook creator says: Handed down from my Cajun Grandmother. Gravy is great on rice or mashed potatoes. Change seasoning to what you like , but, Cajuns like spicy!

New Orleans Red Beans with Spicy Texas Sausage. I didn't figure ham hocks in nutritional info because you don't actually eat it but you do get fat in the dish from them ,so if you can't have the extra fat and cholesterol try adding a little liquid smoke or lean smoked ham .
