Cookbook creator says: This recipe contains apples and bananas. Would squash instead of bananas help the muffins come out lighter? I would use skim instead of soy milk.

Cookbook creator says: I skip the molasses and tomato paste. I use the whole can of corn and beans, but wash them first in a strainer. I also add 2 cubes of chicken broth for just a little more flavor.
