This a biggest loser recipe that I adapted to what I had in the kitchen. I only counted a 1/4 cup of the bread crumbs because I threw away 3/4 cup of the bread crumb mixture. This would make good chicken nuggets, it was a big hit with my kids. I counted as 8 servings because the chicken breasts I had were extremely large.
