I threw this together and everyone in my house loved it. I marinated the chicken in orange juice and garlic overnight. I removed the chicken breasts from the marinade before cooking.

I threw this together from what I had in my pantry at the time. With proper planning, I'd use fat-free soup and sour cream. It is delicious as-is, but fat could certainly stand to be cut.

You can put the chicken into the slow cooker while still frozen, so prep time is virtually non-existent! A great choice to throw in before bed for lunch at work or in the morning for that night's dinner.

This recipe calls for two pounds of chicken, also because it was what I had available (three large breasts), but would make a great meal with just one pound, too.

I served this along with brown rice and black beans. Tasty!

This a biggest loser recipe that I adapted to what I had in the kitchen. I only counted a 1/4 cup of the bread crumbs because I threw away 3/4 cup of the bread crumb mixture. This would make good chicken nuggets, it was a big hit with my kids. I counted as 8 servings because the chicken breasts I had were extremely large. A very good replacement for Shake and Bake, but healthier.

It's a very basic chicken cordon bleu only it's unwrapped - this recipe compliments to my husband being generous and pounding out my chicken breasts to prepare for my regular CCB recipe... only to beat them to a pulp so they were too holy/tore up to use as a single wrap version.

This version has a little "zing" to it because of the pepperjack cheese - it can be completely substituted out for swiss cheese without causing an upset in the nutritional information.

I actually think I like this one better than the other!

This is my simplified and more nutritious Chicken Pad Thai.
Easy to make with ingredients most people have in their cupboards.

You can make this meatless by skipping the chicken step and by cracking a couple eggs over the frying veggies instead, also by switching the chicken stock with veggie stock. This will change the nutritional content.

Cut the sodium even more by using no sodium added chicken broth. My grocery store doesn't always have this option, but whenever I can I buy it!
