This is one of my favorite soups! Slightly sweet with a kick! The chipotle en adobo peppers can be found at a regular grocery store where the authentic mexican ingredients are. They are in a can and only one pepper is plenty for this whole pot of soup.

Fresh salsa is always better than bottled, and it is much lower in sodium. This salsa is great with tortilla chips, on tacos or burritos or tostadas, or even straight out of the bowl!

These come out very moist. I found this on the back of a grocery store ad and made a few changes. The original called for 2 tsp of Thyme, 1/4 c of Parmesan, & 2 c of cornflakes. I measured after I dipped and found I had a good 1/2 c of mixture left so I cut the recipe back accordingly.

* For those of you that are salt restricted- You might want to leave out the salt as there's probably enough in the Parmesan cheese. I just sprinkled a little salt over the bowl.

I also extended the cooking time. The original time was 20 mins.

Western Hidalgo, Mexico known for its excellent cuisine. I stayed at a superbly elegant hacienda adjacent to El Chico Natural Park, from where I obsconded with this dish, before going on to visit the Tula archaeological site, one of ancient Mexico’s most important ceremonial centers. At the ruins you’ll see figures, called atlantes,15-foot sculptures which are considered important symbols of the state of Hidalgo.

Dice the mango, jalapeno peppers (remove seeds, if desired) and red onion. Mince cilantro. Mix pineapple, mangos, japalenos, cilantro, red onion, and lime juice. Season with salt, to taste.

If desired, add more lime juice, depending on the sweetness of the fruit. Serve with baked tortilla chips or as a condiment for fish.
