Cookbook creator says: These muffins are very filling. Freeze a dozen or so in order for a quick microwavable breakfast. Consume with fruit mixed with yogart or spread some peanut butter on the muffins and there you have it...a fast, healthy breakfast. When I want a spinach pizza...I make this. Very yummy, full of protein, calcium and magnesium (one of the hardest minerals to get into my diet). Use fresh raw spinach. I tried it with frozen and steamed spinach, but it was messy and did not taste as good.Submitted by MYGYPSYCAT
