These are all relatively simple veggie meals we eat in our house on a regular basis. My main goals are for meals to be inexpensive, tasty and easy to prepare. :-)

This is a veganized version of the corn bread recipe that came on the bag of cornmeal. I had been making it for awhile and then found out my husband's family had used the same recipe for years. It's sweet, northern style, and somewhat crumbly. Great in soups and chili, or for breakfast with jam.Submitted by TRIATHLONRUTHIE
This is about the easiest method of making chili that I know of. It's great with cornbread and some veggies on the side. We almost always double or quadruple this recipe because it freezes well.

This recipe takes cheap, plain spaghetti sauce and makes it into a vegan meaty, creamy, tangy sauce.
We use Hunt's Garlic and Herb because it's the least expensive sauce you can buy that doesn't contain a lot of sugar or fat. In fact, it's pretty much the same price as buying unseasoned tomato sauce.Submitted by TRIATHLONRUTHIE
