As a vegetarian household, we especially LOVE the time of year when the days are long and hot, and the squash are plump and plentiful! This recipe is from a dear family friend and has been passed down through generations of her large Italian family. It uses loads of zucchini, and is both freezable and delicious! It does take a long time to make and requires quite a bit of work - but I promise, itís WORTH it! Give it a shot and after all the time and effort - ENJOY with a loaf of crusty Italian bread and some vino!
