This is a fast and easy recipe that tastes like a special occassion. The red wine can be replaced with 2 tablespoons of vinegar and water topped up make 1/2 cup. The Splenda may be replaced with brown or white sugar. Nutrition info is for Splenda, not sugar.

This is a tasty low-fat dinner I make that everyone loves. You can serve it with brown rice. I usually serve it with a vegetable to keep it lower in carbs but is is great over grown rice.

This is a recipe from the Better Homes & Gardens New Dieter's Cook Book, Meredith Books, 1st Ed. 1992, page 175. I increased the chicken to 16 oz. for 4 persons (4 oz each) when calculating this recipe & left out a dash of pepper.
