I stole this from sparkpages nutrition planner and I couldn't get it to add to my nutrition if it wasn't planned on that day...so I decided to add it to the recipe box!

This is an extremely low-fat, low-cal lunch. I like to eat it with whole-wheat crackers and reduced-fat cheese to make a delicious, healthy, balanced meal.

This is my favorite meal when I want pasta but can't have it. This feels so rich and hearty, but it is low in fat, calories, and carbs; but high in fiber, potassium and deliciousness! P.S. It also freezes well when assembled in layers. Feel free to swap the beef with ground chicken, pork, turkey, or even tvp.

In many parts of Mexico this dish is served as a soup or a vegetable side dish with rice or crushed taco shells.

What I found incredable was the use of both cilantro and coriander. Both the herb and the seasoning come from the same plant.

The green cilantro leaves has a flavor that is the cross between parsley and basil. While the crushed of ground coriander seeds have a mild lemon taste. In this dish, AS CHEAP AS I AM, you DO NOT want to sub out celery leaves for cilantro. ?Was that just a moth that flew out of my wallet?

This recipe is best made int the summer, when tomatoes are at their natural best.

I had a similar dish at Phillips Seafood in D.C. years ago. I liked it so much, I set out to make my own rendition. I like it as a side for fish, just like I had it originally. My mom likes it over pasta. My husband adds parmesan cheese and red pepper flakes. Anyway you serve this dish, it is a delicious and light way to get your veggies!

I like to make this as a side dish at dinner. Served with swordfish and a salad makes for a low calorie meal. Sometimes when I am famished and just have to have something late at night I make this dish because it is filling and won't ruin the diet for the day - even if I eat both servings.
