Heat small frying pan on med. high add spinach well drained. Cook 2-3 min. While cooking scramble 1 egg and 2 egg whites. Add tomato and egg mixture. Scramble when eggs look almost done add feta cook another 30 seconds and serve with 1 slice whole wheat toast. Enjoy!

I have to watch my cholesterol and saturated fat, so I tweaked a recipe to make it work for me! You can use all Splenda, I used some sugar because my boyfriend doesn't like the Splenda after taste (he's very sensitive!).

An experiment in low fat cooking that seemed to work! I don't even think you would need the oil at all, and you can always use applesauce instead.
This was a BIG batch for a large breakfast, so you may want to make half of it!
