This is absolutely one of my favorite meatloaf recipes. It is a great crock-pot recipe, but can easily be made on the fly and put in the oven. If using a crockpot, it works best in an oval pot (not the circle pot style) to maximize the juices. I have shared this with all my family members & every one of them loves it too - even my super picky eater of a nephew! You can use green peppers instead of red, I've used both.
