This is a family recipe that my grandmother brought over with her from Sweden. All my children and grandkids love it, it is the "expected" breakfast when they spend the night at Nana's house. I have replaced the 3 eggs with egg beaters. Serve with syrup (not included in the calorie calculations. My husband and I use sugar free syrup. They are more like crepes and are also delicious with fresh berries and diet whipped topping.

I fell in love with the Kashi Coco Beach granola last year, but no one is carrying it where I live anymore. It was also pretty expensive for a small package, and had 9 grams of fat per 1/2 cup serving. So this recipe is my attempt to recreate a yummy chocolate coconut granola and knock down some of the fat at the same time. The calories in this version are just below the original (224 vs. 230), but the fat was reduced from 9g to 3g without losing any of the protein (both have 6g of protein)!

I found this recipe and changed it a bit to fix some of the issues. The new,improved version will result in fluffy, delicious scones that are just sweet enough to fill your sugar cravings, but are relatively guilt free! The kids won't even know they're not packed with sugar!

These are very dark chocolate. If you prefer them less dark, substitute flour for some of the cocoa powder.
