Less than 70 calories per pancake, you can easily have two for breakfast and still have room for some turkey bacon or eggs! Almost 2g fiber and 4g protein per pancake as well! Good and good for you, cant beat the simplicity either.

I realized half way through that I didnt have eggs, so I made it without. The recipe calls for 2 lg egg whites, but was perfectly fine with none. You can also use veg oil if you prefer. A great snack anytime of day, my 2 yr old loves it and has no idea there is cauliflower in it!!! We only eat a small slice as our serving size so that is what is calculated, you may eat more if you have it for breakfast though....enjoy!

This is a favourite after-school snack in Kerala homes. High in protein and fibre, it kept us kids going those extra hours until dinner - often eaten at 8 p.m. or later!

This recipe is a basic one - feel free to experiment with other spice mixes that you prefer!
