I have loved Greek food since I was a girl eating at George's Place, a Greek restaraunt in Kirkland WA owned by a friend's family. I became addicted to spanikopita at a young age which, although not in this cookbook due to it's very high fat content, is still one of my favorite foods of all time.

The combined flavours of Flat leaf (italian) parsley, olives, onions and lemons give this salad a fantastic authentic middle eastern flavour.

You could replace the cheese with Halloumi or any other middle eastern/greek/turkish cheese that you like. I use light to keep the calories down.

A real crowd pleaser! These savory meatball style ground pork kebabs pack a lot of flavor! Ready to eat in about 30 minutes. Easy to make, kid friendly!

Serve with rice or in a pita with Tzatziki sauce. (Cucumber/Greek yogurt sauce). Double the recipe and cook and freeze for easy meals later in the week.

Very yummy substitute for spaghetti. Add some chicken for protein! Or split it into smaller portions and have it as a side dish.

Greek Yogurt Honey Buns

Giving my mom a break from bagels this week! These soft, sweet rolls are made with a rich, thick Greek-style vanilla yogurt and sumptuous honey. Shaped into spirals, they rise and bake up beautifully - you'd never guess they were full of fibre! These would be great on the brunch table this Mother's Day.

I also like to grate a little mozzerella over the top, but I didn't include that in the calorie count.
Oh, and prep time depends how fast you chop your veggies. lol

From "Greeks use this marinade to spice up lamb, poultry and seafood, but I also like it on vegetable kebabs. Use red wine when marinating red meats, white wine for poultry and seafood. For a special, if nontraditional, marinade that works with either, try retsina (a resin-flavored Greek wine)."
