I know not many people like plain yogurt sweetened or used as part of a meal but I've eaten varieties of this since I was a kid along with my food or as a meal and it's GREAT and very healthy. One of my favorite childhood memories is eating Grandma's 'cabbage casserole'. It's one of those things where you just layer 'stuff' in a pan and bake, but boy, is it good! This is a family recipe that my grandmother brought over with her from Sweden. All my children and grandkids love it, it is the "expected" breakfast when they spend the night at Nana's house. I have replaced the 3 eggs with egg beaters. Serve with syrup (not included in the calorie calculations. My husband and I use sugar free syrup. This was very good and much easier than stuffing the cheese into the chiles, but with pretty much the same flavor of the traditional method. If you don't care for hot food, you could use plain Monterey jack cheese instead of the pepper-jack. For myself I added more pepper.
