This recipe uses canned vegetables and is useful for somebody who doesn't have a lot of refrigerator space to keep fresh vegetables. However, for a fresher taste you can always use the fresh veggies! It's pretty filling, and fairly low-calorie for 1 cup portions. Make some corn bread to go along with it and add some green beans on the side and you have a great, low calorie dinner. I found this recipe on Spark ("Slow Cooker Beef Stew"), but the nutritional info seemed off, so I reviewed the recipe and found that it had only used 3 oz of stewing beef in the calculations instead of the 2 lbs called for in the recipe, and only 1 carrot instead of 3 (not a huge difference there, but it helps with your fiber.). So, instead of only 4 g of protein, you're actually getting over 37 (unfortunately, the calories are a bit higher, too!) Hopefully, nobody will be offended by me entering this here!
