This is just a trial I will update after I try it. FYI...I have little pans...Make twice as much for 9 inch pan. I use small round pyrex to make individual cakes. It only took about 30 minutes to cook it that way.

I baked the pumpkin in advance, you may use canned pumpkin. I don't know if it will change the calories. The crust isn't tightly packed because I wanted to use as little butter as possable. You can leave out the canola oil if you like, I only use it for the healthy fats.

It is very IMPORTANT to rinse the canned beans very...VERY well this will help reduce the sodium per serving by almost half as the beans are packed in a sodium based slime.....rinse very well and you can divide the soduim per serving by at least half.

This is a yummy smoothie I drink most days, gives me energy and a nice boost to start my day the same way coffee used to but only now I don't crash afterwards!

For Bariatric Patients, add 1 scoop of your fav protein powder to make this a complete meal replacement or help you reach your protein quota for the day.

My favorite frozen fruits for smoothies are:

Mandarins (packed in water not syrup)

Strawberries
Mango

Blueberries
Acai berries
Cranberries
Rasberries
Blackberries

The best way to freeze your own fruit is to rinse well, pat dry with a towel and spread on a cookie sheet to freeze this way the fruit wont freeze in giant clumps that are difficult to break apart. Store frozen fruit in a ziplock bag or airtight container to prevent freezer burn.

The strawberries add enough bulk to make 10 generous sized muffins that are not even 115 calories each! They are also made with whole wheat flour, and without sugar, butter or oil, resulting in a delicious recipe that you couldn't feel guilty about if you tried.

If you do find that it isn't quite sweet enough, adding 1/4 cup sugar to the flour mixture in the beginning will only increase the calories to 133 per muffin. Enjoy!

I altered a tasty restaurant recipe that is a twist on plain banana muffins to take out most of the sugar (there's some in the Splenda Brown Sugar Blend, but you can just use all Splenda, being sure to convert to the correct measurements, if you want a sugar-free version). I also used non-fat milk and canola oil to reduce some of the fat. To make this even healthier you could also use whole-wheat flour and/or egg beaters. You can also use just about any nut you choose. The nutritional information is for walnuts.

The addition of the cinnamon and chunked bananas is a nice twist on regular banana nut muffins

The original recipes calls these cupcakes. By substituting whole wheat flour, and applesauce for a portion of the white flour and oil, I made them healthier. I also used Splenda instead of sugar. I eliminated the cream cheese icing originally called for and decided to serve these as muffins! My kids love these, even requesting them for birthdays. I wanted to make a muffin that my family could have in the morning that was more low-fat and healthy. You can add more bananas in place of the oats if you wish. And If you don't have psyllium husks you can change that to oats or wheat flour. I also make these with frozen mixed berries. If you don't have protein powder you can leave it out and the muffins will turn out just fine. I add it so that the muffins can be a complete snack. SO sorry to those of you who have viewed this recipe...I didn't know I "shared" it! This was originally the filling for a frozen pie but had a monstorous amount of fat. I decided to make into mini muffin size servings. It's a hit. Still not GREAT for you or a health food but any stretch of the imagination but a great indulgence once or twice a year. I'd love to try this sometime with low fat Cool Whip and see how it stacks up. If you want to live dangerously, pour the entire amount of filling into a chocolate graham cracker crust and freeze.

This is how I make chai when I need something warm that makes me feel enveloped in comfort without the added calories of my former addiction: hot chocolate. This is a lightened up (lower fat, sugar free) version of an old classic with a few changes for the holidays. It has 1/2 lowfat mayo and 1/2 regular mayo to cut some of the fat. Instead of sugar, I subsituted splenda. For the holidays I substitute dried cranberries in place of raisins and substitute Lite Raspberry Pomegranate Vinaigrette Salad Dressing for some of the apple cider vinegar. This makes a very festive side dish which is great for a holiday brunch, luncheon or dinner.

Pumpkin Oatmeal Snack Bread

1 1/2 cups oatmeal
2 teaspoons baking powder
1 tsp. Ground Cinnamon
1 tsp. Ground Ginger
1/8 to 1/4 tsp. Ground Cloves
2 tbsp. cornmeal
¾ to 1 cup Splenda (to taste)
2 tablespoons hot tap water
1/2 cup pumpkin pureed
1/4 cup egg beater or 1 egg
1 teaspoon vanilla extract
1/4 cup unsweetened applesauce
1/2 cup skim milk
Preheat oven to 350 deg. F. Mix dry ingredients with wet ingredients. Pour into an 8 x 8-inch baking dish sprayed with Pam. Bake for 40 minutes or until inserted toothpick is clean. Very Moist!

I know the ingredients sound weird--but this dessert/snack is out of this world. It satisfies my cravings for something sweet and rich, but it's low fat, high protein, sugar free, and filling. I'm used to having one of those pudding cups and still feeling hungry, but after even a small serving of this pudding I'm satisfied--I don't want to eat anything else.

Chop onion and pepper, fry in olive oil. When onions start to get soft, add turkey and fry up. Once the turkey looks cooked, dump in the cans of beans and corn.
Melt the chocolate in beer. Pour into the chili mixture. Add cumin, chili powder, salt, pepper and cilantro to taste.
Bring it up to a boil, then reduce heat and simmer or leave it in a crock pot, either one, for a couple of hours.

I combined two recipes, one for black bean brownies (that sometimes gets complaints for being too gooey) and one for whole wheat brownies (that can be to dry), and replaced the sugar with Splenda. You could add walnuts to the batter just before baking. Try icing them with cream cheese, Splenda and cocoa. Suitable for diabetics and those on Phase 2 of South Beach. Yummy pumpkin dessert that can be made healthy or unhealthy. You can substitute all the oil for apple sauce and 4 egg whites instead of 2 whole eggs works just as well. I've also occasionally reduced the white sugar by up to 1/4 of a cup and it's still very yummy. Lots of fiber and pumpkin goodness. I confess I eat these for breakfast some times.

Cook turkey in skillet till no longer pink, then transfer to a dish and cool in refrigerator. Remove core from head of lettuce, then wash and dry leaves. Combine next 7 ingredients (carrots through green onions) in a bowl, then stir in cooked and chilled Jennie-O turkey. Arrange lettuce leaves on the outer rim of a serving plate. These muffins came out super moist and so chocolatey! Also a good source of potassium and fiber. Can easily be veganized by replacing buttermilk with soy milk and sour cream with vanilla soy yogurt. I found a Broccoli Salad Recipe (#18291) on Recipezaar.com that used low-fat products but it used real sugar. To make it even less calories, I switched to Splenda.

It would be healthier if you used unsalted sunflower seeds but I only had salted.

Other versions also may include bacon bits, cheese, and raisins, if you want to add the calories. I was out of the reduced-fat bacon bits and cheese. I'm doing South Beach Phase 1 right now so I left out the raisins, too.

Hint: If you mix your dressing in your large salad bowl, you can add the vegies to the same bowl and save on cleanup.

This is a GREAT summer recipe to bring to a cookout! It looks so pretty in a trifle bowl ($10 Bed Bath & Beyond.com), takes no time at ALL to make and no one will guess its a healthy treat!
I put 12 servings in the nutritional info but that is a good size serving - even half that would definitely suffice!
Also - using the vanilla sugar free pudding cuts the cals a decent amount and doesnt sacrifice taste at all.

Sift flour and salt. Combine butter and boiling water in saucepan; keep over low heat until butter is melted. Add flour all at once stir vigorously over low heat until mixture forms a ball and leaves the sides of the pan. Remove from heat. Add unbeaten eggs one at a time, beating thoroughly after each addition; continue beating until a thick dough is formed. Spread on a cookie sheet.

Bake at 375 degrees for 30 minutes. Cool. Mix 4 small packages instant vanilla pudding with 4 cups milk. Add 1 (8 oz.) package softened cream cheese. Spread over cream puff crust. Cover with Cool Whip and drizzle with melted chocolate over top.
