When I was in Norway, I had this shrimp salad that was bright pink and totally delicious! I got a cookbook from IKEA recently and between several recipes for appetizers in there I have come up with this one.

Floridian Mustard Greens

I love Southern "greens", but I wanted to put a Floridian twist on them. These mustard greens smell and taste very tangy.

Please, by all means trim some of the fat off the pancetta if you want. It won't change the flavor.

I was in the mood for some tangy pork so I decided to marinate a tenderloin in mojo and bee pollen. Bee pollen dissolves in the liquid and adds anti-allergen power, that honey flavor, and some scientific studies claim that it actually contains all the nutrients that you need to live.

Some of the bee pollen benefits have to do with the fact that bee pollen has high concentrations of the B vitamin complex, and also contains Vitamins A, C, D, and E. PLEASE PLEASE avoid if you're allergic to bees!!

Cookbook creator says: These were awesome! Not very sweet but just right. I loved the silicone pan. The indendations on the bottom became very krispy and brown.

Using the fat-free mayo added that richness/lightness balance that you would get from real butter.
