This is one of my go-to recipes that I came up with years ago by using random veggies I had on hand. This is a very versatile recipe, so the veggies or spices can be adjusted as you see fit. Other ideas (not calculated in this recipe) include shelled edamame, eggplant, snap peas, carrots, leafy greens, Brussels sprouts, etc.

This is a great meal for two with leftovers for the next day's lunch!

This is a great low-cal alternative to mash potatoes. Surprisingly I think it tastes similar to the point you won't miss them even! Cauliflower with cream cheese & cheddar cheese to top. A great side dish!

I've made this with either Hubbard or Butternut squash. The Hubbard has a wonderful flavor, but the hard skin makes it very hard to work with. The Butternut squash is easier to work with, and also has a nice flavor.

This soup is filling and low cal. You can add some cooked rice to the soup when you serve to change up the texture.
