My mom was diagnosed with celiac disease about 8 years ago. We have looked everywhere for delicious recipes that substitute other products for gluten. i was fortunate to come upon this wonderful recipe, which uses only 2 unusual ingredients: GF flour and Xanthan Gum. Even though I CAN eat gluten, I still very much enjoy this delicious banana bread. It is best hot from the oven!

It is super moist, bursting with flavor, and you would never know it was GLUTEN FREE :)))

Plus, it is very low in saturated fat and high in polyunsaturated and monounsaturated fat. It is fairly low carb for a banana bread and it also has 1 gram of sugar PER slice....and they are generous servings!

thick fluffy low calorie pancakes. ideal for breakfast. i eat mine with blueberrie. great for gluten intolerant people. to reduce cal further, omit large beaten egg and use egg white instead.

This recipe was developed as a snack for lab meetings. My boss is celiac and the senior post-doc is allergic to eggs. You can substitute 2 eggs for the yogurt if you want a richer version and you don't have egg allergies.

These are sweetened with honey, and they use homemade, gluten-free graham crackers. My mom said they are the best peanut butter balls she's ever had and she couldn't care less about the regular ones ever again, and my sister pretended to dump a plate of the regular ones in the trash can. Guess these are a hit!

My mom made this for years, and I loved it as a kid. It comes out brownish because of the spices, is always super moist, and is DELICIOUS! This version calls for gluten-free flour, but regular flour may easily be substituted.

What makes these better? Peanut butter that's nothing but peanuts (no sweetener, no salt), a little extra egg & chocolate chips, and baking powder. They come darker than the regular flourless PB cookies, with a more peanutty/brown sugar taste.
