I love cauliflower...and cheese. Ham adds a bit of flavor and protein. You can sub chicken and light cheese for an even lighter meal. Have one cup with a salad, or two cups if your hungrier.

(Recipe reconstructed and adapted from Hildegard's circa 1157 treatise Physica: Liber Simplicis Medicinæ ) These biscuits were first made over 900 years ago by the Christian saint, Hildegard of Bingen. She said that these spice biscuits should be taken t regular intervals to increase joy and positivity! I like to substitute half of the plain flour with spelt flour, and use all organic ingredients.

This is my husband's mother's recipe for a traditional German spice cookie. She made it for years and her little boy always looked forward to it for Christmas. Now that she's passed away, I continue the tradition in her honor. This is not an easy recipe to make, it takes time to prepare and to allow it to "cure" over the course of two to three weeks.

This is one of the few vegetable dishes that my young grandson loves, but without the onions. He said it was like the Rahmspinat he ate when he lived in Germany. I serve it to family and for company.

I have made this with Smart Balance buttery spread and skim milk. Do not 'overdo' the nutmeg.
