This recipe was my own creation based on my taste preferences. It is a hearty, filling, high fiber, high protein soup/stew with a slight mexican flair.

You could substitute ground chicken for turkey, but make sure it is ground chicken breast.

A serving equals about 1.25-1.5 cups

Easy, yummy and nutritious. You can trade any kind of beans to change this recipe up. I added the refried beans in it to make it a thick hearty soup.

Only for the garlic lover, a hot dip that is best when coupled with lime flavored tortilla chips. Good on celery and with crackers too. Use it as a marinade on chicken or beef. Not for the faint of heart or sensitive palates.

Fiber One Chocolate Raisin Protein Bar

This is a modified version of my original Fiber One protein bar recipe posted on my blog. This one cuts out the artificial sweeteners except what is already present in your protein powder of choice, and adds in a bit of coconut for flavor and texture. It tastes like a krispie treat smooshed on top of a chocolate Tootsie Roll infused with just a hint of coconut, raisin, and peanut butter, and it is dairy-free and artificial sweetener free except for the protein powder. You can try to find a Stevia-sweetened, non-dairy protein powder if you like. Also, note that one bar has over 7 grams of fiber, which is over 1/4 of your recommended daily intake.

At 226 calories, 29 g carbs (7 g fiber), 20 g protein, and 6 g fat, this is suitable as a portable meal replacement or post-workout snack for those of you doing Body-for-Life, South Beach, the Zone, or other similar plans.

Yes, I did just use the terms high protein, low carb, low fat, CHOCOLATE, and brownie in a recipe title... this isn't a lie folks, it's a tried and true concoction that is sure to knock your socks off! I bet you thought you'd never hear healthy and heavenly words combined in the same sentence, let alone, recipe! But here we have it... a brownie that is so good for you, and unbelievelably good to eat!

AND... it's a single serve recipe (so no temptations... even the best of foods should be eaten in moderation), takes but a minute to prepare, and an even shorter amount of time to make (plus it's microwavable!).

So enjoy this miraculouse, devine, and oh so delicous treat! I know that I have. Happy healthy eating!
