Cookbook creator says: A variation on my favorite, Roast Chicken! I like using the under skin method to flavor the bird since the meat gets all the goodness, rather than the skin. Putting it in at a higher temp helps to seal in the moisture and makes for a juicy chicken (info I learned long ago from the Joy of Cooking). Cookbook creator says: Try different pairing of greens to find your favorite balance of flavors. Be careful with kale since, at least for me, they tend to be the most bitter.
