I threw this together tonight with what I had in my house. You can reduce the sodium by draining and rinsing the beans (not accounted for here), but if you do that, you'll want to add about 1/4 cup of low-sodium vegetable or chicken stock to give it some moisture while it cooks. Play around and add more vegetables/seasonings, this is just what I had at the time.

I have a very different variant with chicken which is good, too. This recipe is more directly related to one in a food & wine cookbook but has been heavily adapted. One of the best things about summer is the fresh vegetables that you can get at a farmers market or your own garden (or if you're lucky like I am, a neighbor's garden). Grilling really brings out the flavor of the corn and zucchini, and it's so easy to do.
The other great thing about summer is the herbs. You can use any combination you like. I used basil, cilantro, oregano and lavender, but use what's available and what you like.
This is a really easy salad to make, the prep work just takes some time but it's really worth it.
