Cookbook creator says: You can pretty much add any vegetable you like. Adding 2 cups of grilled chicken (diced) doesn't change the points and increases the calories to 121.9 +/-. This is just a trial I will update after I try it. FYI...I have little pans...Make twice as much for 9 inch pan. I use small round pyrex to make individual cakes. This is one of my favorite soups! Slightly sweet with a kick! The chipotle en adobo peppers can be found at a regular grocery store where the authentic mexican ingredients are.
