Turkey Meatloaf
Very Good 4.8/5
(27 ratings)

This is a fast, easy, and flavorful rendition of a favored food - meat loaf. You buy cheap and common ingredients to prepare a healthy main dish. I generally serve this with a side of steamed broccoli, green beans or mixed veggies.

With 2g of fat and 28g of protein, you can't go wrong!

entered not because it is unusual although hopefully it is very tasty, but so that I can track sodium (used what I had but attempted to drop sodium) as well as increase fiber (barley both adds fiber and thickens without tomato paste) and to share with my family who use sparkpeople; chili purists of course will scoff, but I look for healthy tasty options so here's one.

D710DANCE's Fake-Fried Chicken Thigh Filets
Very Good 4.6/5
(5 ratings)

This is a tasty low-fat, low-sodium alternative to the traditional fried chicken. This recipe has 10 fat grams and 172.6 mg of sodium. Now compare that to the fat and sodium that is in a regular fried chicken thigh!!!

Listed below is the approximate nutrition values for one traditional fried chicken thigh. Note: The calories, fat and sodium are higher if the chicken is extra crispy (those are the numbers at the higher end of the range):
Cal = 280-360
Fat = 20-27 grams
Sodium = 730-830 mg.

Original recipe calls for regular breakfast sausage, such as Jimmy Dean. But I found this substitute to taste just as good and much less fat and healthier. A great grab and go breakfast. Make ahead and wrap individually in the refridge, micro for 30 seconds on high and go!!

Nancy's Tilapia (or Chicken or Veal) Piccata
Very Good 4.8/5
(44 ratings)

This is my own creation. Sweet, mild, healthy, non-fishy tilapia is complimented by lemon, capers, butter, broth, and white wine in this satisfying and deceptively easy meal. I like my piccata lemony with touches of onion, garlic, and capers to round out the taste. This is a basic recipe for 1 lb. of filets. Please reduce this recipe accordingly if you use fewer filets, unless you want the leftunders as lunch or another dinner, like I do, if all is not eaten during the first go-‘round. I am a strong believer in flexibility, so experiment and substitute most any flaky white fish, pounded-flat veal or chicken cutlets, according to your creativity, pantry contents, budget, ingredient-availability, and personal tastes. I would greatly appreciate your feedback on this recipe, including any suggestions, comments, and input. Thank you for reading and trying this recipe! SparkPeople rocks my world!

Western Hidalgo, Mexico known for its excellent cuisine. I stayed at a superbly elegant hacienda adjacent to El Chico Natural Park, from where I obsconded with this dish, before going on to visit the Tula archaeological site, one of ancient Mexico’s most important ceremonial centers. At the ruins you’ll see figures, called atlantes,15-foot sculptures which are considered important symbols of the state of Hidalgo.

Panko Bread Crumbs add a wonderful crunchy coating to fish fillets that gives them a "deep fried" taste. Even fish haters like me love it and can learn to enjoy fish! ***NOTE: In light of the recent discussions about over fishing and the Spark article about "safe fish", I am removing the "Orange Roughy" from the title. I use Alaskan Halibut for my recipe now, but I leave the choice of fish up to each of you for yourselves. :-)
