This is moist and hearty hotcake loaded with pumpkin flavor brought out by traditional holiday spices.

You can freeze leftover pancakes in an an airtight freezer bag and reheat the next morning in the microwave (about 1 minute on high).

My children ask for this recipe instead of standard pancakes all the time. I love that they get a veggie in their breakfast, and that they don't want syrup with it!!!

According to Chef Meg: "Frittatas are a great brunch item. They’re simple to prepare but look impressive. This particular frittata is a great dish for the summer months.... The egg yolk creates a richer frittata, but you can use all egg whites if you prefer." I re-made Chef Meg's recipe to use simpler ingredients, such as using onions instead of shallots, and Parmesan cheese rather than feta cheese. I also used three extra-large eggs, rather than a combo of egg and egg whites. This makes a hardier, richer serving that should easily sustain you throughout the day.
