Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.

I got this from the Fix It and Forget It Lightly cookbook. It calls for any diet soda. I actually used Diet Dr. Pepper. I used Kraft Original Barbecue Sauce. Finally, I'm not an onion person, so I skipped them--and used minced onion instead. It was ABSOLUTELY delicious! The only hard part is eating JUST ONE SERVING!

The meat does not need to be seared in skillet first to make this fall-apart tender, pulled BBQ beef for sandwiches. This recipe has so much flavor no one will notice the Worcestshire sauce & the salt were deleted to reduce sodium (you may also use low-sodium catsup and BBQ to reduce sodium further). Using molasses instead of brown sugar and Worcestshire gives a depth of flavor and authenticity, while reducing sugar & sodium. It is great to take to picnics, buffets, or tailgating. Freezes well.

Unchained Recipe Contest - Grilled bean and cheese sandwich with sweet poato chips

This a remade grilled cheese and french fry meal from any typical restaurant. I love grilled cheese but it typically has no nutritional value as it's just bread and cheese! The beans in this re-made grilled cheese add fiber and protein. The brown mustard adds a glue to cheese and gives the sandwich an unexpected tang! The sweet potatoes are much better than normal white potatoes and they are roasted in the oven instead of deep fried. The nutritional information will change based on the brands you use - I am entering the brands I used obviously!

FYI - I've also made this with plain beans that I spiced up myself with a little salsa and mexican spices and then mashed. Feel free to do that if you don't have or like refried beans!

I love eating at Chipotle and even if I get the burrito without the tortilla all of the extras and the serving sizes of everything packs on a lot of calories. While I love the taste of their rice it is not brown rice, which I prefer to use. I also find it much cheaper to make this at home, rather than buying it. I prefer to make my own salsa rather than buying it in a jar. But of course you can substitute if you prefer. But this one tastes great! It is always a hit at cookouts and with my family. My secret ingredients to the beans are thyme and sage. They add so much flavor. I attended a vegetarian cooking class and the instructor talked about adding those two herbs to everything to give a richer and more satisfying taste. This was the first thing that I tried them in and it is delicious. This recipe is not very difficult to make nor is it time consuming. What will take the most time is the rice, which can be made ahead. I am very much an “add a little of this and that” person, so I did find it hard to pin down measurements! Fast Food Category

I love Subway's Veggie Delight, but sometimes I want a more meaty sandwich, sans the meat. I used to love Philly Cheese Steaks before going veg, and thought a thinly sliced portabella would substitute nicely. It did not disappoint!

I used 2% milk and regular cheese when I made it just because that is what I had. I'm sure it would be fine with skim milk and low fat cheese and an egg white to make lower fat version. Also cut down on the sodium by using no salt added tomatoes, fresh corn, and substitute a Mrs Dash Southwest Chipoltle seasoning for the seasoning salt.

Hamburger cups were a staple while I was growing up. They were easy to make, the ingredients were almost always on hand, and you could get a four and six year old to eat a vegetable. Add a LITTLE extra flavor to your veggies by pan frying up some turkey bacon while you steam your veggies until they are ALMOST DONE. Then add them to the pan with bacon and stir. The flavor of the bacon permeates the veggies. This IS tastier with real bacon as the flavor is stronger, but healthier with the turkey bacon.

My husband ate something similar on a trip to Munich. He searched the internet until he found a recipe that sounded like what he ate. After a few tries and a few alterations, this is what we came up with. Not a low fat meal, but hearty and satifying. Served with mashed potatoes it is a real winner. To accomdate the high fat, just plan out your meals for that day to give balance.

A crispy fried meatball, filled with cream cheese and sausage. This is Grandma's recipe made lighter. Tasty and rich. This is a lighter version using neufchatel instead of regular cream cheese. The sauerkraut helps the calorie count. At about 60 calories each, they are about like eating a cookie, but so much better! Makes about 11 dozen, 1 inch balls. A lot of work, but worth it for special occasions. We make them at Christmas and eat them through the New Year.

Adapted from a Company's Coming recipe, using whole wheat flour instead of white, light buttermilk instead of regular, and with the margarine cut in half! These obviously aren't the healthiest snacks ever, but paired with a nice cauliflower soup or something, one of these biscuits is an acceptable indulgence! I usually make a batch or two, freeze them on baking sheets, then transfer to ziplocs and just make a couple at a time. They still only take about 15 min to bake!
