Delicious vegan foods that I make at home for me and my vegan family. I try to stay LOW FAT and vegan. I never use an added oil unless I have to to make the dish more flavorfull.

I ate at a wonderful Egyptian Restaurant in Chicago and looked for a recipe online. I found one and changed it up to reduce the fat but keep the wonderful taste. This can be as spicy as you like. I like it medium hot so I add just 1/8 teaspoon of cayenne. You may add more or add red pepper flakes to add more 'hot'.

Traditional Shepherd's Pie is that delicious beef, vegetable and gravy casserole with the Mashed Potatoes on Top. Who knew that it would taste just as good without the beef? It really does and it is good for you too.

A great combination of chili and fall veggies makes a delicious healthy vegan meal.

I always rinse the canned beans to lower the sodium. I think the sodium count here on Spark does not take that into account. (Lately I use dried beans for all of my recipes to take care of that problem.) If you use dried beans make sure you soak them overnight and cook them before you make this recipe.

You can really use any fall firm fall veggie you would like. I sometimes use a combination of sweet and white potatoes. Rutabaga and turnips would be great too. As would red and green peppers.

When I was growing up my Grandma would make Poor Man's Cake. Her recipe included shortening. I adjusted the recipe using Earth Balance to make it vegan.
This is not a healthy recipe. I make it for a special occasions.

I found this recipe on my favorite recipe site, fatfreevegan.com. It is a moist and delicious cake. You can eat it plain or make a vegan cream cheese icing.

This can be lower fat if you leave out the coconut.

I found this base recipe on "Everyday Dish TV" then adjusted it to my taste by adding vegan Chorzo or Italian sausage and more spice. This recipe makes a ton and is good for pot luck or shared dinners.

I was at Trader Joe's and saw these meatless meatballs and thought. Meatball Sub! I made them with a Mexican flavor because I wanted to use salsa and and the Daiya Cheddar "Cheese" I had in my fridge.


This recipe looks high in sodium but I always rinse the beans which lowers the sodium content. To reduce the sodium significantly, buy salt free beans or soak your beans from dried.
