In my house, pumpkins are for eating--not carving! Stuff small pumpkins for an interesting presentation.

If you love pumpkin pie, you'll love this. It's basically hearty pumpkin pie, without a crust. There is more pumpkin in this dish than in most pumpkin pies, so you get plenty of Vitamin A with this tasty, low-calorie dessert.]

(I wasn't sure what to call this - but it turns out to be somewhat pudding-like. It's really great reheated!)

This is a classic stew from Argentina that combines hearty beef, vegetables, and , for an interesting twist, fruit.
Now this does contain beef so if you are also a vegetatian, of any class, PLEASE write me with and alternative. I've tried and failed.
This recipe is rather elaborate and should be served for parties.
My granddaughter calls it Cinderella Stew, because it is served in a pumpkin. "And there we keep her very well."

CAUTION-Wear rubber gloves when handling serrano peppers or wash hands thoroughly after handling. Your skin, especially around your eyes, can be sensitive to the oil, seeds, ribs, or the spounge of the hot peppers.

I personally like to make individual cakes in muffin tins. It helps with portion control, and I don't have to deal with an entire cake. I spread out the batter into 24 muffin tins.

If I want to use a Bundt pan, I cut this and freeze it in individual baggies to avoid temptation!

The original recipe calls for 1/4 cup confectioners' sugar and 1 1/2 tablespoons fresh lemon juice, which is drizzled on top of the cake. It will up the calorie count a wee bit, though and I don't think the cake needs it.
