This is a variation of a Recipe submitted by SparkPeople user TWINMOM143 - Skillet white beans, spinach, & tomatoes

I personally do not like the texture of beans over pasta, so I turned the beans into a sauce. I also used fresh tomatoes instead of canned.

healthy tasty muffins- sometimes if I only have applesauce I will put 1 1/2 cups in receipe. I have also eliminated salt completely.
