These cookies are basically low - everything! Low-calorie, low-fat, low-sodium, but high in Vitamin A, thanks to the pumpkin. And they taste great! They're soft & chewy and perfect for the holidays.

Normally I would also add mint to this recipe, (I have included it in the ingredient list but not the nutritional info) but today when I made it I had no mint. Also, I would normally use fresh parsley not dried. Lastly, I used lime juice over the apple to use 1/2 a lime I had in the fridge.
